Remember how we used to buy these babies from corner diaries and share them under the blistering sun with our best friends?  Yum!



  • ~ 60g (organic) coconut butter melted over low heat / some people use vegetable shortening – seriously just whatever you have in your pantry, it is Monday night quick treat after all!
  • 200g desiccated coconut
  • 150g icing sugar
  • 1 dash of vanilla extract
  • 1 organic egg white (I must insist on the organic – the mixture will not be cooked so it is safer to pick the organic option)
  • 1 droplet of pink food colouring


  1. Grease a square/rectangular baking tray (if you can get your hands on a springform tray then good for you).
  2. Line the bottom with grease paper.
  3. Grease light again.
  4. Whip egg white till a bit foamy.
  5. Mix in everything else save the food colouring.
  6. Press half of the mixture into the bottom of the tray.
  7. Tint the rest of the mixture in the mixing bowl and press on to the white layer already in the tray.
  8. Cover with cling film and leave in the fridge to set for 45 minutes.
  9. Remove, cut & devour slowly with tea and good company.

I stress the good company part – this is not the sort of goodies you want to share with so-so friends as previously mentioned.
